HOW TO CHOOSE THE CORRECT BEER GLASS

There are many features of beer glasses that influence the flavour and aroma of beer that we, unfortunately, don’t pay enough attention to, for instance, every style of beer can be matched to a particular glass shape. Varying degrees of curvature and bowl size help to capture certain aromas, for example, the wider midsection of stout glasses are ideal for retaining the heady caramel and malt aromas of heavy beers.

The volume of the glass also impacts the flavour of the beer. We are so used to seeing servers fill our glasses to the rim, which is great if you are really thirsty, but not ideal when you seriously want to savour the drinking experience. Always choose a beer glass with greater internal volume than the beer being poured. This way you will ensure that there is sufficient head space for gradual aroma diffusion, otherwise all those fine fruity notes that make your beer special will disappear.

Lastly, make sure your glass is of fine, brilliant quality. The clarity of your glass highlights the unique colours of your beers bringing extra appreciation to the tasting experience. At Core Catering Supplies, we offer a wide selection of premium beer glasses to bring out the best in your old favourites.

Snifter Glass

Snifter beer glasses transform the traditional tulip-shaped design into one of the most versatile beer glass types by creating adequate headspace for complex brews like Belgian ales, IPAs and stouts to release their aroma. The curved chamber of a premium snifter glass allows floral and fruity notes to flourish ensuring you a complete tasting experience.

Weiss Glass

The specific incurved shape of the Weiss glass accentuates the wheat aromas for the nose unearthing everything from fresh fruit to the scent of grains. Its large head chamber provides excellent space for aeration and allows for gradual carbonation evaporation. Its pleasant-to-hold, narrow stem also helps to keep your beer cool.

IPA Glass

With a nice large, round bowl that gradually indents and opens up again at the mouth, an IPA glass is designed to preserve the frothy head and intricate flavour profile of IPA beers. A wider mouth allows you to take in all of the hop and citrus aromas with every sip.

PLATE LIKE A PRO WITH THESE TIPS

The way you present your food is what tempts customers to try a dish. We eat with our senses: what we see, smell, and feel. And in the age of Instagrammers and food bloggers, food plating and presentation matters more than ever.

Transform your meals from simple to stunning using these Core Tips.

Shapeshift

A simple tip for plating food is to follow the shape of your plate. If you are using circular plates, echo its shape by placing the elements of your meal in a circular composition to add rhythm to your dish. Similarly, a square dish will have added depth when served in a square plate.

Puree All The Way

Purees are essential for visually stimulating dishes not only because they can easily be manipulated into the shape of your choice but also because they can anchor hard to balance components as the base of your dish. The best part is they are really easy to make! Using a simple stick blender, you can pulse together veggies and fruits to create deliciously creamy pastes in seconds.

Blooming Dishes

Edible flowers can add just that pop of colour you were looking for to send your dish over the edge. Some of our favourites include violets, nasturtiums and bean blossoms. But remember, flowers have a taste so make sure to only add ones that make sense with the plate as a whole. As they are prone to bruising, our tip is to use precision tongs to delicately place your flowers where you want them on the plate.

Draw the Line

Speaking of focal point, you can use a simple sauce bottle to create lines that direct the eye in the direction of your choice. This technique works for both precise drawing and a more abstract approach. Try to experiment with the different ways you can draw emphasis to certain elements of your meal.

Our Top Tip?

Just have fun with it! The most exciting and innovative ideas are always born from experimentation. Not everything is going to look amazing the first time you try it but you would never know what does work if you never tried it. So use our tips as a guideline and give yourself the time and patience to play around with new plating ideas. We’re sure you’ll be creating culinary fine art in no time.

Tools of the Trade

Investing in some quality tools and equipment is the first step in taking your plating skills further. JAN HENDRIK – SA’s FIRST MICHELIN STAR CHEF

Chef Jan Hendrik van der Westhuizen has recently been making waves the world over as the first South African chef to be awarded the coveted Michelin star for his restaurant, JAN, in Nice, France. Known for introducing local South African flavours to the world stage, Jan has fostered a love and interest in our country’s cuisine like no other. Luckily, for those of us who have not had the privilege of tasting his unique dishes, Jan has decided to bring his culinary creations back home through the new, aptly named, KLEIN JAN restaurant in Tswalu Game Reserve and JAN Innovation Studio in Cape Town, all with the help of Core Catering Supplies.

JAN, Nice

The Studio, Cape Town

KLEIN JAN, Tswala

Starting from humble beginnings helping his mother and grandmothers in their Middelburg kitchen knead dough and prepare traditional dishes, Jan has always had a “passion and vision for all things South African – our food, people, shared culture and art.” It’s precisely these early experiences of South African hospitality and honest food that inspired his restaurant, JAN, and subsquently earned it immense international praise.

KLEIN JAN, a partnership with the Oppenheimer family, comes in the wake of JAN’s success and aims to bring a new culinary experience to the quintessential South African landscape, the vast Kalahari. Here customers can expect authentic local flavours like never before through their fine transformation into world-class cuisine. JAN Innovation Studio, opening in Cape Town, will help to bring about this experience by functioning as a space where chefs and students can develop and push South African cuisine to new heights.

Such an ambitious project requires the proper tools, so when it came to choosing the right kitchenware and cooking equipment for this new venture, Jan chose Core Catering Supplies, the largest suppliers of professional-grade catering equipment in South Africa.
